Quince is our most polite restaurant design – a space for elegant food and quiet conversation, a place to take your time to enjoy the exquisite food that Michael Tusk invents on a daily basis. The building is a historic brick building, and here the modern and the old coexist happily together. We opened the kitchen to the street, so that the culinary ballet that goes on could become part of the street theatre. Then we created rooms within rooms, spaces that were protective and private, tables where one could savor a meal.
